Increase the plugin timeout in your nagios.cfg, possibly up to 60s or 90s, depending on how big your VMware installation is.
The VMWare API is notoriously slow, especially if you have an underpowered virtual centre, and so the check_vmware plugin can time out when using the default Nagios settings (a 30s timeout for plugins).
Another way to do it is run the check_vmware in NSCA mode (see the documentation and --help output) where it will run in batch mode via cron (or similar) and probe the VC for ALL virtual hosts and then use NSCA to submit the check results.
